That’s right it’s almost homemade, well that’s not entirely true it is "homemade" it just wasn’t made from scratch. While I was at home in Ireland in March I picked up a packet of Oldums bread mix and stuck it in the suitcase. Ever since then I’ve been drooling over the thought of some freshly baked brown bread warm from the oven with a generous helping of Irish butter (which thankfully you can buy here in the supermarket!) and jam.
Last night Kathy decided to make jam using the strawberries we bought at the weekend and I knew it was time to crack out the bread mix and pop it in the oven. This is the easiest bread you could ever make. There’s only two steps– mix in water – bake for 40 mins. It only everything in life was this easy.
I won’t be counting this as my “bake my own bread” goal since the point of that goal was to actually find a bread recipe that I could make on a regular basis, and sadly I haven't found Oldums bread mixes here in the grocery stores here. But it has given me a fantastic reminder of what good bread tastes like and made me even more determined to make my own.
Expect to see a few different bread recipes over the next few weeks as I search for the “perfect loaf”.
Oh I love almost home made! A little cheating doesn't hurt and this looks soo good.

I love the bread in Laurel's Kitchen Bread Book. It is time consuming, but totally worth it. And she really teaches you how to make good bread.

The bread and jam looks great. I've got a recipe for you which I make for toast rather than sandwich. It's a healthy bread that the kids love for breakfast with jam on it. I made some more over the weekend. Give this one a go it's easy. Make sure you use a thermometer to get lukewarm water as this is where it can make the difference between killing the yeast or getting it to rise. I use a temperature of 105-110 degrees which I can usually get from the hot water tap but you could also boil the kettle and let the water cool down a bit and check on it.
