I’ve found my chocolate cake recipe…the recipe I plan to use for all future chocolate cakes, and pass on to my children because it’s just that good! If you’re a fan of The Great British Bake Off then I’m sure you’re heard of Mary Berry and her delicious recipes for traditional cakes/breads etc . This is one of her recipes for a simple chocolate sponge cake with dark chocolate ganache and it is scrumptious!
The recipe (including some more detailed instructions) can be found here but the gist of it is below because I’d hate to lose the recipe and I’ve started to use my blog as a digital recipe book.
50g/2oz cocoa powder
6 tbsp boiling water
3 free-range eggs
4 tbsp milk
175g/6oz self-raising flour
1 rounded tsp baking powder
100g/4oz baking spread or soft butter
300g/10oz natural caster sugar
For the ganache:
150ml of double cream
150ml of dark chocolate
Directions: - Preheat oven to 350F, make a paste with cocoa powder and water. Mix in all the other ingredients by hand but don’t over mix. Pour into 2 greased and lined 8 inch pans (don’t to self if you don’t line the tin it will stick and you’ll have to start over!). Bake for 30 mins. For the icing just chop up the chocolate very finely and stir into warm cream. Leave to set slightly before slathering all over the middle and top and sides of the cake (try not to eat too much straight from the spoon!). Enjoy
I made the cake for Kathy’s birthday last week and it went down a treat. I made the cakes the night before at about 10pm, which is why the photos are so bad, and then the ganache in the morning before bringing it into work to celebrate her birthday with friends. Everyone enjoyed the cake and the leftovers we brought home left well in the fridge for 2 days…I have no idea how we managed to keep chocolate cake for 2 days but it happened!
