Let’s see it’s now Thursday which is the 4th day of my 30 day weight loss challenge and I’ve been doing fantastic at one of the goals in particular – the one about not eating out and cooking meals at home. I think this challenge has re-awakened my interest in food. For someone who loves food I spent a lot of time trying to avoid cooking, which is why a lot of my dinners up until recently have consisted of cheese toasties, cereal or something else that takes 2 minutes to make and zero effort to think about. A huge food rut.
Since starting the challenge though, I’ve been thinking about food a lot, and not in a “wish I was stuffing my face with chocolate” way. I’ve been looking up recipes, making up meal plans, actually cooking meals and best of all getting excited about food again. I found this recipe on OhMyVeggies and had to tweak it a bit based on what I had in my cupboards.
1 cup of dried quinoa
½ teaspoon of salt
½ teaspoon of dried basil
½ cup of shredded cheese
2 gloves of garlic (I used a zester to make them very fine – I hate finding lumps of garlic in my food)
1 ½ cups of breadcrumbs
1 vegetable stock cube
1) Cook the quinoa with the vegetable stock cube and about 2 cups of water, until the water is fully evaporated – this takes about 10-15 minutes. Then allow the quinoa to cool.
2) Combine the cooled quinoa with the eggs, basil, cheese, garlic and salt, then stir in the breadcrumb.
3) Shape the mixture into 12 patties and then fry in a teaspoon of olive oil.
I served these with the cashew mayo (also included in the link above) which was ok. Just ok. I think it was missing something but I can’t quite put my finger on what was missing so I’ll have to play around with that recipe until I can figure it out. So until then just pair these quinoa cakes with your favourite sauce.
I loved these quinoa cakes and now these patties are going to become a regular dinner time fixture around here for sure – also if you’re doing weightwatchers these are 3 points per pattie but 2 patties is more than enough for a dinner, I ate 3 but was stuffed.
