For the last few weeks I’ve been thinking a lot about cake. That sounds weird right? For the record I don’t mean all the time or anything, but at least once a day whenever I’d sit down in the evening time with my cup of tea I think “I’d give anything for a good biscuit (also known here as a cookie :)) or some cake”
Evening time is my “mooching time” as my mother is fond of calling it. It’s the time I’m most likely to sabotage a healthy day of eating with an evening of terrible, terrible overeating. My food mooching coupled with reckless abandon is the reason I gained so much weight in the first place. (You can read more about my weightloss journey - before and after - here)
So in my attempts to make better choices I made a rule that certain things like cookies and cakes would not be brought into the house and that if I wanted to eat them I’d have to make them first. This actually works surprisingly well because usually I’m far too tired and lazy in the evening to want to bake a cake etc so it’s a pretty good tactic.
But Friday evening I gave in to my cake craving and made a delicious banana bread cake. I say cake because I don’t have a loaf tin but I do have an 8” cake tin so banana bread cake it is. I used this recipe and didn’t change anything except to decrease the cooking time to 40 mins (on account of the smaller tin). It worked perfectly, was delicious and a perfect way to use up the overripe bananas that were sitting in the fruit bowl.
This wasn’t a “healthy” cake – no trick ingredients like my recipe for healthy chocolate cake – but you can’t beat a good slice of cake every once in a while right?
Maybe now I’ll finally start thinking about something else besides cake!
