Cheesy, cheesy goodness!!! Mhhhh I love pizza, it’s always been one of my go to food treats. When we were growing up we never ever got takeaways, so I'm never bothered with Chinese takeaway or McDonalds etc. but when my mother wanted a night off from cooking we got oven pizza. Thus a lifelong affair with deliciously cheesy pizza was born.
Two weeks ago best friend and I got pizzas from Dominoes – they had a special on to get two pizzas for the price of one so we each got a medium pizza. I made all the “good” choices you can when it comes to pizza; I picked the thin crust, mozzarella cheese and veggie only toppings. That pizza still came to a whopping 30 Weight Watchers points (basically, completely over the recommended nutritional intake for a whole day!). Anyone who has had the thin crust pizza will that there’s a lot less eating on a thin crust compared to a pan pizza. I felt cheated! I could have so many other yummy things with those points, like chocolate…...
So takeaway pizzas are out and homemade low point pizzas are in instead. Now technically speaking this isn’t really pizza since there isn’t a dough base. It’s pizza toppings on a sandwich wrap baked in the oven until the wrap is crispy. A super super thin crust pizza if you will…..but importantly it looks like pizza, tastes like pizza and I could eat 4 of these for the same points as the takeaway pizza!
What to do:
- Preheat the oven to 450°F
- Take a can of crushed tomatoes, drain and then add to a saucepan with sautéed onion and garlic, add fresh basil and oregano and cook for 5-10 minutes until the tomatoes are s1oft and the water has all evaporated off leaving a thicker sauce – voila homemade rustic pizza sauce
- Grab a sandwich wrap, mine were from Trader Joe’s and are 4 pts each, load it with pizza sauce, ¼ cup of shredded mozzarella cheese 2 pts and then whatever toppings you want – I used sweet corn and yellow pepper but you can add anything at all.
- Bake in the oven for about 10 minutes and then enjoy!
